Butternut Squash Soup

It's finally the fall season and SOUP SZN!! There is nothing I crave more as the weather gets colder, than homemade vegetable soups. This one is a MUST as it is delicious and will give you all the fall flavors you have been craving!

Ingredients

  • 2 tablespoons olive oil
  • 2 medium yellow onions chopped 
  • 2 large butternut squash about 5 pounds total, peeled and diced into chunks
  • 4 medium apples - cored, chopped 
  • 4 cups low sodium chicken stock or vegetable stock 
  • 1 1/4 tsp kosher salt 
  • 1/2 teaspoon freshly grated nutmeg
  • pinch of black pepper
  • pinch of cayenne pepper

Instructions

  1.  In a large pot saute  your onion in olive oil until translucent about 8 minutes
  2. Add in your squash and apples and spices let cook about 2 minutes
  3. Pour in your broth and bring soup to boil, then bring to simmer and let cook 30 minutes.
  4. Blend soup and season with salt / pepper, top with yogurt and pumpkin seeds!
