DINNER is DELISH annnnnnd it’s ready in TEN making the most of all the local heirlooms before they’re all gone with this TOMATO FRIED RICE made with your choice of rice, chilled, then stir-fried with 2 eggs, garlic and ginger! Finished with soy sauce, scallions and a squeeze of fresh LIME this was my absolute favorite summertime comfort combo.. still going at it and thankful it’s perfect for breakfast, lunch, or dinner. YOU need to try it and I promise you can throw this together in 10!

Ingredients:

  • 4 scallions
  • 1 lb. cherry tomatoes of all beautiful colors
  • 2-3 heirloom tomatoes, your color of choice
  • Kosher salt
  • 2 Tbsp. toasted sesame oil, divided
  • 3 garlic cloves, grated
  • 1½ tsp. grated
  • 1½ cups chilled cooked rice of your choice
  • 2 large eggs, whisked
  • 1 Tbsp. soy sauce
  • Extra-virgin olive oil (for drizzling)
  • Crushed red pepper flakes (for serving; optional)
  • 1 lime for garnish + fresh squeeze

Instructions:

  1. First things first cook your rice and once cooked, place in the fridge until ready to use. In the meantime let’s do some prep, thinly slice your scallions, quarter or half all your tomatoes, place in a bowl. Take about a large handful of tomatoes and season generously with a pinch of salt, then place in a separate bowl. Heat 1 Tbsp. sesame oil in a large skillet over medium-high. Add the scallions and the unsalted tomatoes and cook, stirring occasionally, until softened. Mix in garlic and ginger; cook, until fragrant, about 30 seconds. Add chilled rice and stir until the rice has warmed all the way through.
  2. Put rice + veggies to the side of the pan. Add some more sesame oil and add whisked eggs to pan, until they just set about 1 minute. Mix into vegetables and rice, then drizzle in soy sauce and stir until well combined.
  3. Transfer fried rice to a large bowl or platter. Drain your salted tomatoes that were set aside, drizzle them with olive oil, and spoon over rice. Top with toasted sesame oil, fresh basil, more scallions, red pepper flakes, and a fresh squeeze of lime!
